Ethanol (etanol) thường được biết đến như rượu ngũ cốc, ancol etylic, rượu etylic hay cồn. Là một hợp chất hữu cơ không màu và dễ cháy. Là thành phần thường thấy trong các loại đồ uống chứa cồn. Một cách gọi khác hay được nhắc đến trong dân gian là rượu.
Ethanol được sản xuất dựa vào quá trình lên men các nguồn hydratcacbon có trong tự nhiên như lúa mì, lúa mạch, đường, ngô, sắn, mùn, gỗ… Một phương pháp khác, trong lĩnh vực Công nghệ tổng hợp hóa dầu, ethanol được điều chế từ dây chuyền công nghệ hydrat hóa khi etylen bằng chất xúc tác là acid. Ngoài ra, bằng con đường làm tinh khiết giữa ethanol và nước cũng giúp điều chế được ethanol.
